Con l’arrivo dell’autunno l’ Accademia Nazionale di Agricoltura in collaborazione con l’ Accademia Italiana della Cucina e della Società Medica Chirurgica di Bologna ha dedicato uno dei suoi tradizionali incontri sulle eccellenze agroalimentari italiane alla zucca. Un viaggio intorno alla regina d’autunno tra storia, stagionatura, proprietà nutrizionali e benefici per la salute.
“Appartenente alla famiglia delle Cucurbitacee” ha spiegato la dottoressa Cecilia Prata, ricercatrice e docente di biochimica applicata e biochimica della nutrizione all’ Università di Bologna “faceva parte della medicina popolare e rappresentava uno dei mezzi di sostentamento delle popolazioni più povere. Negli ultimi anni sta riscuotendo notevole interesse grazie all’identificazione della composizione nutrizionale e fitochimica, cui si correlano le varie proprietà ad essa attribuite come quella antimicrobica, antiossidante e anticancro, grazie ai fitoestrogeni presenti nella polpa che contrastano l’insorgenza delle neoplasie causate da ormoni, soprattutto a mammella e prostata, mentre l’estratto oleoso dei semi riduce i sintomi dei tumori benigni alla prostata. Del tutto falsa, invece, la credenza che il consumo di zucca possa portare problemi in caso di diabete”.
Un ortaggio amico del cuore e della dieta
Alla zucca sono riconosciuti anche i benefici per il cuore, il sistema immunitario, la pressione sanguigna e la circolazione. Contrasta, inoltre, i radicali liberi rallentando l’invecchiamento cellulare, i parassiti intestinali, l’infiammazione della pelle, la cellulite, mentre grazie alle sue proprietà sedative e calmanti è indicata contro ansia, insonnia e nervosismo. La zucca, che è anche un rimedio naturale contro la colite, ha proprietà diuretiche, lassative, digestive, antifungine, emollienti e rinfrescanti.
Un ortaggio interessante anche sotto il profilo nutrizionale: la zucca è, infatti, povera di calorie, grassi, proteine, carboidrati, sodio, zuccheri semplici, mentre è ricca di fibre, vitamine (A, B, C, E) e sali minerali come magnesio, selenio, ferro, zinco, calcio, fosforo, rame e potassio.
Un’alleata della pelle
Grazie alle sue proprietà emollienti, lenitive e antiossidanti la zucca è regina dei trattamenti di bellezza per nutrire, rigenerare, ringiovanire ed elasticizzare l’epidermide. La spa di un centro termale propone, ad esempio, uno scrub naturale ai semi e polpa di zucca per liberare l’epidermide dalle cellule morte e renderla, così, liscia e idratata. La spa invita, inoltre, a provare anche il massaggio corpo idratante alla zucca, vinaccioli, lavanda, centella asiatica e luppolo; il massaggio corpo nutriente alla crema di zucca e vinaccioli e un gommage corpo per esfoliare la pelle alla crema di zucca, semi di zucca e vinaccioli.
Un centro estetico consiglia, invece, di utilizzare la scorza bitorzoluta lavata della zucca per un gommage casalingo per riattivare la circolazione nelle zone del corpo “più gonfie e asfittiche”. In casa è anche possibile, secondo una ricetta classica, preparare uno scrub alla zucca per il viso con 5-6 cucchiaini di polpa frullata, tre cucchiaini di zucchero di canna e un cucchiaio di olio di semi di zucca, in alternativa succo di limone, amalgamando il tutto e da applicare sulla pelle con massaggi circolari per poi risciaquare.
La zucca è anche impiegata, così come l’uva, fichi e castagne, per la preparazione di marmellate cosmetiche o gel cosmetici. Una casa cosmetica, ad esempio, propone la sua marmellata alla zucca da usare come impacco per il corpo nei trattamenti estetici con emissione di calore o vapore come bagno turco, termocoperta, apparecchiature ad emissione di raggi infrarossi o come coadiuvante in trattamenti anti-ossidanti, anti-age, emollienti e di riequilibro idrico cellulare. In commercio si trovano ormai diversi prodotti cosmetici a base di zucca come nettari per il viso per pelli grasse o con acne o per trattamenti purificanti, idratanti e opacizzanti; lozioni tonificanti o lenitive; gel detergenti sebonormalizzanti per pelli impure; creme idratanti opacizzanti; creme per il riequilibrio del pH del viso; latti detergenti seboequilibranti con olio di zucca per la pulizia quotidiana del viso o per rimovere il make-up da viso e occhi.
La zucca, spiega la Fondazione Campagna Amica di Coldiretti, è anche un buon rimedio contro le unghie fragili “con tendenza a spezzarsi” o per rinforzare i capelli grazie a una maschera dalle proprietà idratanti e fortificanti a base di miele e polpa di zucca.
Acquisto e conservazione
I suoi benefici nutrizionali fanno della zucca un ortaggio molto apprezzato in cucina. Con un occhio alla freschezza al momento dell’acquisto “osservando bene” spiega la Fondazione Campagna Amica “che la buccia sia pulita e senza ammaccature” e con il picciolo “morbido e ben attaccato al frutto”, mentre per verificare il “giusto grado di maturazione” basterà fare “una prova sonora bussando con le nocche della mano”: un suono sordo dirà che è matura! Prima di acquistare, invece, una zucca già tagliata assicurarsi che la parte esposta all’aria non sia “eccessivamente asciutta”.
Come conservarla? La zucca intera può essere conservata per tutto l’inverno in un “luogo fresco, asciutto e al riparo dalla luce” mentre una volta aperta e tagliata i suoi tocchetti si possono “tenere in frigo per alcuni giorni oppure congelare, dopo averli cotti in padella o al vapore”.
Un errore da non fare, una volta aperta e tagliata, è quello di gettarne i semi che potranno, invece, essere “sciacquati, asciugati e lasciati essiccare all’aria aperta” per poterli conservare in sacchetti di carta, seminarli in primavera “preferibilmente in semenzaio” o più semplicemente tostarli “in forno per 15-20 minuti a 180°C” pronti per essere consumati come spuntino o condimento.
Usi in cucina
Tante le ricette a base di zucca, ricorda la Fondazione Campagna Amica, dagli antipasti al dolce. La zucca, ortaggio versatile, è, infatti, un apprezzato ingrediente di zuppe, risotti, vellutate, minestroni, insalate e tortelli, come quelli mantovani “farciti con un impasto a base di zucca bollita e con mostarda, amaretti, formaggio e noce moscata”. La zucca ben s’abbina a cipolle o patate, tagliata a cubetti è ottima fritta e a fette gustosa in forno condita con olio, pepe e sale.
La sua polpa può essere lessata o passata in padella mentre lessata e schiacciata è indicata per la preparazione, spiega la Fondazione Campagna Amica, di un pane casareccio dalla consistenza soffice e di un intenso colore giallo-arancio, nonché di torte e dolcetti, come, ad esempio, quelli per Halloween. Frullata, infine, ben sostituisce la salsa di pomodoro.

Tra i piatti a base di zucca la Fondazione Campagna Amica propone la classica vellutata, un primo piatto tipicamente autunnale sano e genuino da servire caldo con cubetti di pane tostato. Una vellutata secondo due ricette dell’agrichef Barbara Stocchi di Campagna Amica.
Ingredienti per sei persone la prima ricetta: 700 g di zucca gialla, 100 g di broccolo romano, uno scalogno, due patate medie, olio, sale e pepe q.b., parmigiano, maggiorana e un litro d’acqua. “Sbucciare la zucca e le patate” spiega l’agrichef “pulire il broccolo, poi tagliare il tutto a dadini. Soffriggere leggermente lo scalogno, aggiungere gli ingredienti appena tagliati e un litro di acqua, aggiustando di sale di pepe (a piacere). Lasciar bollire lentamente fino a raggiungere la cottura degli ingredienti. Al termine della cottura, frullare tutto con un minipimer. Aggiungere del buon olio e una spolverata di parmigiano e a piacere qualche fogliolina di maggiorana. Servire caldo con cubetti di pane tostato”.
Ingredienti per quattro persone per la seconda ricetta: 1 kg di zucca, uno scalogno, una carota, una costa di sedano, due patate, un rametto di rosmarino, burro, olio, sale e pepe q.b. Per la sua preparazione, spiega l’agrichef “pulire e lavare gli odori e le patate, tagliarli a pezzi e farli bollire in un litro abbondante di acqua fino a cottura, poi togliere il sedano e lo scalogno. A parte, tagliare la zucca a fettine, aggiustarla di sale e di pepe e cuocerla in forno a 180°C per 30 minuti circa. Lasciare intiepidire e poi frullarla insieme alle patate e alla carota. Unire il tutto al brodo di cottura delle verdure e lasciar bollire lentamente per 20 minuti circa, finché il preparato non raggiunga una certa densità. Aggiungere una noce di burro e pochissimo rosmarino tritato. Servire con crostini di pane ed eventualmente aggiungere del formaggio grattugiato”.
