La popolazione mondiale è malata di sale e junk food e cibi industriali non aiutano, ma una soluzione c’è, scegliendo una dieta povera di sale e una cucina sana, condendo, ad esempio, con spezie, limone, erbe aromatiche.
Quella dal 4 al 10 marzo è stata la World Salt Awareness Week, la settimana mondiale di sensibilizzazione sul consumo di sale, ormai alla sua XII edizione, promossa dalla World Action on Salt & Health, WASH, gruppo di esperti che si occupa di sale e del suo impatto sulla salute. Con sede nel Wolfson Institute of Preventive Medicine dell’università londinese Queen Mary, missione di WASH è aiutare gli individui a modificare le proprie abitudini alimentari, incoraggiare le aziende alimentari a ridurre l’uso del sale, sensibilizzare i governi per l’adozione di strategie a beneficio della popolazione. Tema di quest’anno Let’s take SALT off the menu!, invito a togliere il sale dal menu, disabituandosi, ad esempio, ai cibi insaporiti col sale, preferendogli erbe e spezie, non portandolo a tavola insieme a salse salate, controllando le etichette, scolando e risciaquando i prodotti conservati in acqua salata.
Ancora oggi nel mondo si consuma troppo sale. Lo denuncia l’Organizzazione Mondiale della Sanità – che raccomanda un consumo giornaliero inferiore a 5 grammi al giorno, corrispondenti a 2 g di sodio - nel suo Global Action Plan for the Prevention and Control of Noncommunicable Diseases. 2013-2020, il piano d’azione globale per la prevenzione e il controllo delle malattie non trasmissibili e di cui la riduzione, entro il 2025, del 30% del consumo di sale, è fra gli obiettivi. È stato stimato, infatti, che una simile riduzione aiuterebbe a prevenire 2,5 milioni di decessi l’anno.
In Italia coinvolti nelle politiche per una sana alimentazione sono il Ministero della Salute, l’Istituto Superiore di Sanità e la Società Italiana di Nutrizione Umana che, anche quest’anno, in collaborazione con GIRCSI, il gruppo di lavoro intersocietario per la riduzione del consumo di sale in Italia, ha aderito alla campagna di WASH, associando alla campagna quella contro il consumo eccessivo di zuccheri.
Il consumo di sale nel mondo odierno è la causa del dilagare di malattie e problemi di salute: “Un consumo eccessivo di sale” spiega il Ministero della Salute “determina, infatti, un aumento della pressione arteriosa, con conseguente aumento del rischio di insorgenza di gravi patologie cardio-cerebrovascolari correlate all’ipertensione arteriosa, quali infarto del miocardio e ictus cerebrale. L’introito di sale è stato, inoltre, associato anche ad altre malattie cronico-degenerative, quali tumori dell’apparato digerente, in particolare quelli dello stomaco, osteoporosi e malattie renali”.
Sale a pioggia, un comportamento assai diffuso. Pasta e riso possono essere cotti in acqua poco salata, ricorda, infatti, la Società Italiana di Nutrizione Umana.
Non è necessario insaporire le ricette con molto sale, ricorda la Società Italiana di Nutrizione Umana: bistecche, pesce, pollo, verdure e patate sono “cibi saporiti anche con poco o niente sale aggiunto”.

I consigli della Società Italiana di Nutrizione Umana
La Società Italiana di Nutrizione Umana ricorda che riducendo gradualmente il consumo di sale si apprezzano di più i cibi e che si può proteggere la salute, senza rinunciare al gusto, seguendo alcune semplici regole. Quando si va a fare la spesa, ad esempio, bisogna sempre controllare le etichette, scegliendo gli alimenti meno salati anche perché “per ogni categoria di alimenti ci sono spesso grandi differenze tra un prodotto e l’altro”.
Riscoprire, quindi, il “piacere di una buona cucina” riducendo il consumo di piatti industriali come sughi già pronti e cibi in scatola. Non è, inoltre, necessario insaporire le ricette con molto sale: pasta e riso possono essere cotti in acqua poco salata, mentre bistecche, pesce, pollo, verdure e patate, anche quelle fritte, sono “cibi saporiti anche con poco o niente sale aggiunto”. Aiuteranno a insaporire le pietanze erbe aromatiche fresche, spezie, limone e aceto, mentre andrà limitato l’uso di condimenti come dadi da brodo, salsa di soia, senape.
Ai formaggi stagionati andranno preferiti quelli freschi, meno salati. Per gli spuntini yogurth, frutta e spremute saranno, invece, “un’ottima alternativa” agli snack salati. Il sale, infine, non andrà aggiunto alle pappe dei bambini “almeno per tutto il primo anno di vita”, aiutando, così, il loro palato ad “apprezzare” i cibi poco salati.
I consigli del Ministero della Salute
Anche il Ministero della Salute non ha voluto far mancare i propri consigli: “Leggiamo attentamente l’etichetta nutrizionale per scegliere, in ciascuna categoria, i prodotti a minore contenuto di sale e cercare i prodotti a basso contenuto di sale, cioè inferiore a 0.3 grammi per 100 g (corrispondenti a 0.12 g di sodio); riduciamo l’uso di sale aggiunto in cucina, preferendo comunque, ove necessario, minime quantità di sale iodato; limitiamo l’uso di altri condimenti contenenti sodio (dadi da brodo, maionese, salse, ecc.) e utilizziamo in alternativa spezie, erbe aromatiche, succo di limone o aceto per insaporire ed esaltare il sapore dei cibi; non portiamo in tavola sale o salse salate, in modo che non si acquisisca l’abitudine di aggiungere sale sui cibi, soprattutto tra i più giovani della famiglia; riduciamo il consumo di alimenti trasformati ricchi di sale (snack salati, patatine in sacchetto, alcuni salumi e formaggi, cibi in scatola); scoliamo e risciacquiamo verdure e legumi in scatola, prima di consumarli; evitiamo l’aggiunta di sale nelle pappe dei bambini, almeno per il primo anno di vita”.
