Dal kebab alle fajitas, dal sushi al felafel passando per tacos e tandoori, in Italia il cibo etnico è sempre più sulla cresta dell’onda complice il proliferare di ristoranti, street food e take-away dedicati. Se negli anni Novanta lo scettro era ancora saldamente in mano ai ristoranti cinesi con i loro involtini primavera, nuvole di drago e grappa di bambù o ai fast food all’americana con i loro hamburger, chips, hot-dog e salsine, col tempo sono arrivate le altre mode culinarie, dalla cucina minimal del jap, come gli estimatori chiamano quella nipponica, a quella turca, mediorientale, maghrebina, messicana o indiana. Una semplice moda? Una questione di portafoglio? Un sincero apprezzamento di gusti nuovi? Chi sono gli italiani che mangiano etnico?
Identikit dei consumatori italiani
Tempo fa l’osservatorio dell’ Istituto Zooprofilattico Sperimentale delle Venezie ha provato a tracciare l’identikit di questi consumatori nell’ambito del progetto di ricerca Ristorazione etnica e sicurezza alimentare: problematiche microbiologiche, reazioni avverse, frodi e percezione del rischio da parte del consumatore finale finanziato dal Ministero della Salute e prendendo a campione 1.317 soggetti. Dallo studio è, ad esempio, emerso che in Italia il consumatore di cibo etnico è “soprattutto donna, lavoratrice, sopra i 35 anni, con figli, residente al nord, con un livello di istruzione medio-alto”. In Italia sono, infatti, più le donne con il 52,5% ad amare la cucina etnica, mentre gli uomini sono il 47,5%. L’84,7% degli intervistati ha, quindi, dichiarato di aver mangiato cibo etnico almeno una volta e il 15,3% di non averlo mai provato. Il 29,5% di mangiare etnico qualche volta al mese e il 45,1% qualche volta all’anno. Il 57,5% di averne aumentato il consumo nell’arco di 5 anni, il 31,7% di non averne modificato il consumo e il 10,8% di averlo diminuito.
Il cibo etnico, solitamente consumato fuori casa, è ormai tendenza anche tra le mura domestiche. Il 75% ha, infatti, dichiarato di comprare prodotti alimentari etnici nei supermercati (48,3%) o nei negozietti gestiti da stranieri (17,2%). Tra i prodotti maggiormente acquistati ci sono quelli della cucina cinese o giapponese (38,8%), di quella messicana/latino-americana (25,7%), araba/mediorientale (14,2%), del Sud est asiatico (10,6%), infine di quella africana (5,4%). A casa si preparano soprattutto cous cous, sushi e riso cantonese.
Diverse, invece, le motivazioni del perché si mangia etnico: per mangiare qualcosa di diverso (51,4%), per ragioni culturali (31,1%) quindi per motivi economici (7,4%) - il 51,4% degli intervistati ha, ad esempio, dichiarato di arrivare a fine mese “con qualche difficoltà”. Il 50,4%, infine, si è avvicinato alla cucina etnica grazie ad amici o familiari e il 24,5% dopo un viaggio all’estero.
Truffe e poca igiene
Sui ristoranti etnici ha, ad esempio, acceso i fari l’ Unione Nazionale Consumatori che ha messo in guardia su molti di questi ristoranti, dove spesso a peccare, come testimoniato da frequenti episodi di cronaca, sono norme igienico-sanitarie, dalla scarsa qualità dei prodotti alla loro cattiva conservazione. Un tranello è, ad esempio, rappresentato dalla formula all you can eat dove pagando la stessa cifra si può mangiare tutto quel che si vuole. Se l’offerta può suonare allettante, in realtà nasconde ben altro: “Tutti i ristoranti” si legge in una scheda a cura di Lorenzo Cargnelutti “debbono seguire un manuale di autocontrollo che deve essere reso visibile. Se questo manca evitate di sedervi; controllate lo stato di igienicità del locale e del personale. Un utile indicatore è la pulizia dei servizi; prima di mangiare controllate l’aspetto di quello che vi viene servito e annusate il cibo. Se avvertite odori anomali o osservate consistenza e/o colorazioni sospette non mangiate. Nel caso che dopo aver mangiato avvertiate dei disturbi rivolgetevi alla ASL segnalando quanto successo. Il basso costo potrebbe essere dovuto alla utilizzazione di materie prime surgelate; non potete quindi aspettarvi una qualità organolettica eccelsa”.
Cibo etnico, non ti digerisco!
La cucina etnica, che rispetto a quella italiana è particolarmente speziata, può, tuttavia, diventare un’esperienza poco piacevole in particolare per chi soffre di disturbi gastrointestinali: “Capita spesso” spiegava tempo fa il professore Attilio Giacosa, direttore scientifico del Dipartimento di Gastroentorologia del Gruppo Sanitario Policlinico di Monza “di concedersi serate di sfizi in ristoranti etnici e consumare pasti costituiti da pietanze elaborate e molto speziate. La combinazione di alimenti può favorire il reflusso gastro-esofageo o può generare dolori addominali e irregolarità intestinali, soprattutto in presenza di disturbi del colon”. Non solo spezie, chi voglia mangiare etnico, è la raccomandazione, non deve esagerare nemmeno con fritti, condimenti e salse: “In caso di eccessiva acidità nello stomaco e di bruciori” così il professor Giacosa “possono aiutare a tamponare i fastidi gli antiacidi o gli antisecretori; è ovviamente consigliabile una maggiore attenzione da parte di quei soggetti che soffrono di ernia iatale o sono affetti dalla sindrome del colon irritabile”.
Per contrastare i disturbi gastrointestinali Assosalute , l’associazione italiana di farmaci di automedicazione di Ferderchimica , consiglia di non eccedere nella quantità di cibo e di non dimenticare l’importanza di sport e attività fisica; di optare sempre per una dieta equilibrata, evitando l’eccessiva mescolanza di cibi, nonché di associare quelli particolarmente grassi; di non consumare troppi dolci, in particolare a fine pasto; di controllare la quantità di alcool consumato durante i pasti, perché se un bicchiere di vino può apportare dei benefici, non così una maggiore quantità che potrebbe, al contrario, peggiorare la digestione.
Contro i disturbi gastrointestinali Assosalute ricorda, accanto a un corretto stile di vita anche a tavola, il ruolo di alcuni farmaci come gli antispastici contro il mal di pancia e i dolori addominali; i probiotici e gli enzimi digestivi contro la cattiva digestione e per favorire il riequilibrio della flora intestinale; i procinetici per accelerare i tempi di transito e normalizzare lo svuotamento gastrico; gli antidiarroici e i fermenti lattici per fermare la diarrea e regolarizzare l’intestino; gli antiacidi per neutralizzare l’acidità gastrica e combattere il reflusso gastro-esofageo; infine, gli adsorbenti intestinali contro il gonfiore dello stomaco e dell’intestino e per combattere aerofagia e meteorismo.
