Pare che il suo gusto si avvicini a quello dei frutti di bosco ma il cioccolato Ruby, conosciuto anche come cioccolato del quarto tipo o cioccolato rosa per via del suo colore, non contiene fragole, lamponi né alcun tipo di frutta. Il colore è infatti dato dalla fava di cacao Ruby, una varietà molto pregiata che lo fa reso, in tutto il mondo, il food trend dominante per il 2019.
I produttori
Il cioccolato Ruby è stato realizzato e presentato a Shanghai nel 2017 da uno dei più grandi produttori mondiali di cacao, l'azienda svizzera Barry Callebaut, dopo oltre dieci anni di sviluppo. Dal suo lancio, la nuova varietà è stata introdotta in Asia, Europa, Medio Oriente e Sud Africa sia da multinazionali che da aziende artigianali tra cui Prestat, Baci Perugina, KitKat, Leonidas e Fazer. Questo quarto tipo di cioccolato è stato anche premiato per l'alto tasso di innovazione negli Stati Uniti e in Medio Oriente. All'Ism 2019, la più grande fiera mondiale di dolci e snack che si tiene fino al 30 gennaio a Colonia, in Germania. L'arrivo di Ruby negli Stati Uniti è stato annunciato nel corso del Saturday Night Live, show di fama mondiale. In Australia, secondo la stazione radio locale Smooth FM, la rete è letteralmente 'impazzita' quando Nigella Lawson ha presentato la novità a Masterchef.
Chef e cioccolatieri mondiali considerano il cioccolato Ruby una delle più grandi scoperte nel mondo del cioccolato degli ultimi decenni, e Barry Callebaut è stato premiato come il 'fornitore più innovativo' dalla NCA (National Confectioners Association) statunitense.
